The Lockdown Everything-Cookie
You voted for this hard on my instagram stories so here it is. This is pretty flexible so go wild, have a play around with it - you can do half granulated sugar/half soft brown sugar but I tend to go all in on the brown. Also, shooting these on a grey wet Feb afternoon has washed them out but IRL they’re golden, crispy on the outside and chewy in the middle.
KICK OFF:
Set oven to 170/180 depending on how hot yours is
INGREDIENTS:
170g unsalted butter melted
1 tsp dark soy sauce
1 tsp of sesame oil
290g dark brown sugar
1 Large egg + 1 Large egg yolk
Free pour decent vanilla extract/ 1 tbsp
2 tbsp toasted sesame seeds
260g plain flour
1/2 tsp bicarbonate of soda
Fistfuls of chocolate - I do a mix of milk and dark for balance - I tend to just take a knife to whatever I have lying about to make chunks rather than ‘chips’ - it was last year’s Easter eggs for this batch
A fistful, at least, of salted pretzels
STEPS:
1. Melt butter in a bowl in the microwave and let cool a little
2. Mix the butter and the sugar with HH mixer til creamed
3. Add in the soy, vanilla, eggs & sesame oil and mix until pale and creamy
4. Sieve flour and bicarbonate of soda into a bowl and mix well - I often skip this step but you risk wonky cookies. Then with a wooden spoon fold into the mix until just combined
5. Add in your goodies: chocolate, sesame seeds, pretzels - I’ve been known to add crisps too! Spoonfuls of halva is also amazing but I didn’t add any to these - No bad ideas in a brainstorm etc
6. The mix will be very soft and it will spread like a giant blob in the oven so approach with caution/logic : smaller dollops of mix = smaller cookies and less spread. We made giant ones and they take a bit longer to cook and love to spread right out so if that’s you too then be sure to give them room. Rule was roughly 12-14 mins for giant ones if you want crispy on the outside and chewy in the middle. Reduce time for smaller - keep your eyes on the prize as you don’t want them raw in the middle but you also don’t want them too overdone either.
